  • 15cm round, 20cm round, 25cm round cake tins, lined with baking parchment
  • Butter: 150g, 250g, 400g
  • Eggs: 3, 4, 6
  • Ground mixed spice: 1/2 tsp, 1 tsp, 1 1/2 tsp
  • Golden syrup: 1/2 tbsp, 1 tbsp, 1 1/2 tbsp
  • Light muscovado sugar: 150g, 250g, 400g
  • Plain flour: 200g, 300g , 450g
  • Rum: 2 tbsp, 4 tbsp, 6 tbsp
  • Tropical Dried Fruit Medley: 300g, 500g , 750g
  • Ground ginger: 1 tsp, 2 tsp, 1tbsp
  • Vine fruit mix: 300g, 500g , 750g

Steps

  1. Place one of the shelves below the center of the oven.Set the oven to 150°C
  2. Chop the Tropical Dried Fruit Medley
  3. Beat the ground mixed spice butter, ginger, golden syrupand sugar until the mixture is pale in colour. One at a time, beat the eggs. Add a tablespoon of flour along with each egg. Beat in the rest of the flour.Fold in tropical and vine fruits
  4. Spoon the mixture into the lined cake tin, level the surface. To give a smooth surface, you can rub the cake with your hand
  5. Put the cake in the center of the oven. The 15cm round cake will take about 2 1/2 to 2 3/4 hours, the 20cm cake 3 to 3 1/4 hours and the25cm cake 3 1/4 to 3 1/2 hours.To see if it’s cooked,insert a skewer into the cake. If it is cooked, it will come out clean. If not, bake longer. Cover the top with a sheet of baking parchment when the cake starts to brown too quickly
  6. Remove it from the oven and leave to cool for 15-20 minutes. Next, spoon the rum over. Leave it to cool completely in the tin
  7. If the cake is not being decorated immediately, wrap and foil it in baking parchment. Keep in a coolplace.
